Challah

Ingredients
3.5 Tablespoons Yeast
2 Tablespoons Sugar
2 Cups Very Warm Water
3 Eggs
1 Cup Oil
1.5 Cups Sugar
3 Tablespoons Salt
2.5 Cups Very Warm Water
5 Pounds Flour

To begin...
In a small bowl combine yeast, 2 tablespoons of sugar, and 2 cups very warm water. Set aside to let yeast rise about 5 minutes until bubbles.

In a large bowl or mixer, combine eggs, oil and remaining sugar. Mix. Then add yeast mixture, salt, and remaining water. Mix and slowly add in the flour about 1-2 cups at a time.

Knead until smooth and bouncy.

In a clean bowl grease with oil, place dough into bowl and cover the top with a bit of oil. Place saran wrap over the top and a towel atop that. Place in a sunny area and let sit until doubles in size.

Shape loaves. Let rise for 30 minutes. Egg and add toppings (we suggest seeds, chocolate, or sugar).

Bake at 350 degrees until light brown on bottom and hollow sounding. For individual small rolls 20-25 minutes. For loafs 25-45 minutes depending on size.
